I was inspired by this post to write about something that has become very important in my life: leftovers!
I say very important because I literally have been eating (and loving) them all week.
Like I have been saying for the past two weeks, meal prepping has changed my life.
Taking the meal part of a meal, in this instance quinoa, and adding extras to it can totally change the meal, yet take a short time to prepare!
Quinoa was the start of the chili, the quinoa bowl and the salad.
All three were great, easy meals and generally made up of the same ingredients.
It's all about how creative you want to be and what you are in the mood to eat.
